Hello. How are you this week? I am feeling, well, a
little out of sorts. Lots going on. Has me emotionally and physically drained.
Nothing major. Little life things, you know. But all of that to say, listen
close, you will not hear this often…. Listening? Ok. Well, I have nothing to
say this week. Yep. You heard me. Shocker, isn’t it? I told that to Jim and he
guffawed. (Funny word, isn’t it?) 26 years and he can count of one hand how
many times I didn’t have something to say.J So,
this week, you get a breather. Instead, I leave you with a recipe from my
wonderful Aunt Sue. Bacon makes everything better!
Recipe for the week:
Bacon
Corn Bread

slices bacon
1
¼ cups all purpose flour
1
cup cornmeal
2
t sugar
3
tsp baking powder
1
tsp salt
1
½ cup milk
½
cup vegetable oil
1
beaten egg
Heat
oven to 425 degrees. Cook bacon until crispy; drain and crumble. Spoon 2 t
bacon fat into round pan, 9 x 11 ½ inches. Sprinkle with bacon. Mix flour,
cornmeal, sugar, baking powder and salt. Mix in remaining ingredients
thoroughly. Carefully pour batter over bacon. Bake 25 to 30 minutes or until golden
brown and cracks feel dry. Immediately invert onto heatproof serving plate.
Makes 8 to 10 servings.
